Buckwheat porridge
Buckwheat porridge is one of the most traditional and beloved dishes in Russia and Eastern European countries. It is known not only for its taste but also for its exceptional health benefits. Buckwheat is a valuable source of plant protein, complex carbohydrates, vitamins, and trace elements. Health Benefits Buckwheat is rich in iron, magnesium, potassium, phosphorus, and calcium. It contains vitamins of the B group, vitamin E, and PP. Thanks to its high fiber content, buckwheat improves digestion and keeps you feeling full for a long time. Buckwheat does not contain gluten, so it can be consumed by people with celiac disease and wheat protein intolerance. It also helps lower cholesterol levels and normalize blood sugar levels. Preparation The classic way to prepare buckwheat porridge is simple. The grains are sorted, washed, and poured into water in a one-to-two ratio. Salt is added to taste and cooked over low heat until all the water is absorbed. The finished porridge is seasoned with butter. For a more fluffy porridge, the grains can be pre-roasted in a dry pan. Buckwheat is cooked with a lid on, without stirring, for about fifteen to twenty minutes. Varieties Buckwheat porridge can be thick and fluffy. Thick porridge is made from groats or Smolensk grains, which is more suitable for baby food and dietary diets. Fluffy porridge is cooked from kernals — whole buckwheat grains. In Cuisine Buckwheat goes well with meat, mushrooms, vegetables, and milk. Dishes like casseroles, kulebyaka, side dishes, and even meatballs are made on its basis. In Russian cuisine, buckwheat porridge with stewed meat, onions, and eggs is popular. Interesting Facts Buckwheat was domesticated in South-East Asia more than four thousand years ago. It came to Europe thanks to the Tatars-Mongols, hence its name in some languages as \"Tatar grain.\" In Russia, buckwheat has become so popular that it has entered proverbs and sayings. ... Read more
